Dhokla

Dhokla  is a steamed snack from the Indian state of Gujarat.
This recipe makes around 20 pieces.

Ingredients Required:
Sooji/Rava - 1 Cup
Curd - 1 Cup
Water - 1/4 Cup
Salt to taste
Lemon Juice - 2 Tsp
Turmeric Powder - pinch
Chopped Green Chilli - 1
Chopped Cilantro - 2 Tsp
Eno Salt - 1 Tsp

For Seasoning:
Mustard Seeds - 1 Tsp
Curry leaves - 1 Twig
Pinch of hing

How to Make?

In a bowl, mix all the above ingredients together except the Eno Salt. Add more water if required to make a smooth batter. Allow the batter to rest for an hour.
Add Eno salt to the batter and mix well.
Grease a pan with oil.
Pour the batter in the greased pan and steam cook for 10 min in a cooker.
Remove the pan from the cooker.
Heat oil in a small pan and add mustard seeds, pinch of Hing and curry leaves.
Season the Dhokla.
Cut it into diagonal shapes and serve hot with Chutney of your choice.
Best goes with Mint or Coriander Chutney.
