Carrot Cake

Carrot cake is a cake which consists of grated carrot mixed with batter. The carrot softens in the cooking process, and the cake usually has a soft, dense texture. The carrots themselves enhance the flavor, texture and appearance of the cake.


Ingredients Required:
Vegetable Oil - 1 1/4 Cup
White Sugar - 2 Cups
Vanilla Extract - 2 tsp
All purpose flour - 2 Cups
Grated baby carrot - 3 Cups
Baking Soda - 2 tsp
Baking Powder - 2 tsp
Salt - 1/2 tsp
Cinnamon Powder - 2 tsp
Almonds/Pecans - 1 Cup

How to make?
Preheat the oven to 350 F.
Grease and flour a cake tray (preferably 9X13 inch).
Mix all the above ingredients together.
Pour the batter in the cake tray.
Bake for 40 to 50 min.
Poke a fork in the cake to see if the cake is done.
Cool for 10 min.
Cut the cake and serve with Vanilla Ice cream.
